Me too! We have so much in common already. What’s that? You’re allergic to wheat? A coeliac? Lactose intolerant? Vegan? Fear not, I have just the thing for you!

I’ve entered my company Antoinette’s Bakery into the Arthur Guinness Projects. Antoinette’s is a 100% gluten-free bakery which also caters to the dairy/egg/sugar-free market. I currently sell at farmers markets and privately to customers- but it could be so much more. With a couple of clicks you could be helping to establish Dublin City’s first gluten-free bakery and retail store.

With the help of funding from Arthur Guinness Antoinette’s can grow and start to accommodate the gluten-free masses seven days a week, stage baking demos and offer a space for those with intolerances to share their experiences. It will also see the development of new jobs as the workforce expands to beyond just little old me.

My name is Sinéad Vaughan and I was diagnosed Coeliac in 2009 while studying Baking and Pastry Arts in DIT. It became clear that what the market had to offer was a sub-standard product, and that most companies catered to the gluten-free market as an afterthought. My research and experience also indicated that a lot of the products were not Irish-made. Antoinette’s Bakery was started in 2011, named for Marie Antoinette and her infamous "Let them eat cake" gaffe, of course.  Everyone deserves delicious cake.
